Red Onion Chutney Recipe

Tasty red onion chutney will become one of your favourite condiments.

  • Chopping board and knife
  • Large saucepan
  • Long-handled spoon for stirring
  • Ladle
  • Jam Funnel
  • Clean, sterilised glass jars with sealable, non-reactive, lids

Ingredients
  

  • 1 kg red onions
  • 1 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 100 g soft brown sugar
  • 2 garlic cloves
  • 1 red chilli – – as hot or not as you like
  • 1 tsp sea salt
  • ¼ tsp black pepper
  • ½ tsp mustard seeds
  • 120 ml red wine vinegar

Instructions
 

  • Peel and finely slice the onions.
  • Deseed and finely chop the chilli.
  • Heat the oil in a large frying pan over medium heat. Add the red onions and cook slowly for 15-30 minutes until golden and caramelised.
  • Add the balsamic vinegar, sugar, garlic, chilli and salt and cook for a further 5 minutes until sticky and glazed.
  • Remove from the heat and add the red wine vinegar.
  • Pour into sterilised jars and seal.
  • Can be stored in a cool, dark place for up to 12 months.
