Red Onion Chutney Recipe
Equipment
- Kitchen scales
- Chopping board and knife
- Large saucepan

- Clean, sterilised glass jars with sealable, non-reactive, lids
Ingredients
- 1 kg red onions
- 1 tbsp olive oil
- 2 tbsp balsamic vinegar
- 100 g soft brown sugar
- 2 garlic cloves
- 1 red chilli – – as hot or not as you like
- 1 tsp sea salt
- ¼ tsp black pepper
- ½ tsp mustard seeds
- 120 ml red wine vinegar
Instructions
- Peel and finely slice the onions.
- Deseed and finely chop the chilli.
- Heat the oil in a large frying pan over medium heat. Add the red onions and cook slowly for 15-30 minutes until golden and caramelised.
- Add the balsamic vinegar, sugar, garlic, chilli and salt and cook for a further 5 minutes until sticky and glazed.
- Remove from the heat and add the red wine vinegar.
- Pour into sterilised jars and seal.
- Can be stored in a cool, dark place for up to 12 months.
