Chilli mango sauce recipe

Nothing beats the taste of a freshly made chilli sauce! An irresistible harmony of sweet and fiery spices, this tantalizing combination is sure to enliven every taste bud.

Equipment

  • Kitchen scales

Ingredients
  

  • 2 whole mangoes OR 2 cups of frozen mango
  • 1.5 cm ginger
  • 2 cloves garlic
  • 1 onion
  • 2 chillies
  • 15 ml vegetable oil
  • 120 ml apple cider vinegar
  • 50 ml water
  • 100 g sugar
  • tsp salt

Instructions
 

  • Wash, peel and dice the mango into small cubes.
  • Peel the garlic and ginger and roughly chop.
    Peel and chop up the shallot.
  • Carefully wash the chillies. Remove the stalks; cut them in half and remove the seeds (unless you want to have a super hot sauce). Chop up the chillies.
  • Add these fresh ingredients to your blender or food processor, in batches, and blend till fine.
    Empty the puree into your preserving pan.
  • Once all the fresh ingredients have been put into the pan, add the rest of the ingredients and stir through to mix.
  • Gently turn up the heat, and keep stirring until the sugar has dissolved. (Open a window or door as the vinegar and chilli will make themselves known!)
  • Once the sugar is dissolved, turn up the heat until the mixture is boiling.
    Turn the heat down and allow this delicious sauce to simmer for 10-15 minutes. Stir from time to time.
  • Remove from heat and ladle the sauce into a sealable sterilized jar/bottle for storage.
  • Once cooled, label and store in the fridge for 3-4 months. Or you can freeze it in freezer-safe containers for up to 6 months.
    Use your mango chilli sauce as a condiment or ingredient in your favourite recipes.

Notes

TIPS for a delicious mango chilli hot sauce

1. Use Ripe Mangoes:

It is essential to use ripe mangoes when making this sauce as they will provide the best sweet and tangy flavour. You can also use frozen mango chunks so that you can make more of this sauce whenever you want to.

2. Don’t Overcook:

The key to achieving a good consistency for your mango chilli sauce is ensuring that you don't overcook it – so only simmer the ingredients until they have thickened sufficiently, rather than boiling them to rush the process.

3. Spice It Up With Your Favourite Chillies:

To achieve the desired heat level in your mango sauce, you can either use our favourite type of chilli peppers or combine different types of peppers for layers of heat and spiciness. Jalapeno, habanero, bird's eye, scotch bonnet - the choice is yours!

4. Decide if you want a textured or smooth sauce.; thick or runny:

For a chunky sauce with some mango pieces, keep aside some smaller cubes and add them to the cooking mixture towards the end of the process. For a smoother sauce, pass the cooked sauce through a fine sieve.
For a thicker sauce you can make a slurry with 1 tsp of cornstarch and water and add it to the hot mixture - add this in stages so that you can check whether it is as thick as you want or not. Stir the cornstarch in well and allow to cook briefly before adding any more.
If you prefer the sauce a bit runnier, depending on your taste, you can add more apple cider vinegar or some mango or orange juice - you must cook this together till hot again and then bottle. Or strain it and discard some of the solids.
5. You can replace the sugar with the equivalent amount of honey or maple syrup but you must be aware and allow for the fact that this will shorten its shelf-life.
 
 

Seasoning options for this tropical hot sauce

1. Use honey or brown sugar to give the sauce a sweeter note.
2. Add citrus zest and/or juice such as lime or lemon to add brightness and freshness to the flavour profile of your mango chilli sauce.
3. Mix in some ground allspice, cloves, nutmeg or cumin for an earthy twist on the classic sweet and savoury combination.
 
 

Suggestions for enjoying your mango and chilli sauce

1. Drizzle it over tacos, burritos or enchiladas for a burst of flavour.
2. Use as a marinade for grilled meat dishes. And it goes well drizzled over cooked meat, fish or vegetable for something a bit different.
3. Use as a dipping sauce for spring rolls, samosas and other snacks.
4. Mix with yoghurt or soft cheese to create an easy-to-make dip or spread - perfect for crackers, sandwiches and vegetable sticks alike. Or add to a salad dressing and turn up the taste volume!
