Gooseberry Cordial Recipe

This delicious drink is perfect for those summer days when you want something different, refreshing and sweet.

Equipment

  • Kitchen scales
  • Chopping board and knife
  • Large saucepan
  • Long-handled spoon for stirring
  • Fine-meshed sieve OR colander lined with muslin
  • Ladle
  • Funnel
  • Clean, sterilised glass jars/bottles with sealable lids

Ingredients
  

  • 500 g gooseberries fresh
  • 250 g sugar
  • 250 ml boiling water
  • ½ lemon for juice and zest

Instructions
 

  • Wash and rinse the gooseberries, discarding any that are overripe or damaged.
  • Place the washed gooseberries into a large pan and pour boiling water over them until they are completely covered. Simmer over medium heat for around 30 minutes, stirring occasionally.
  • Strain the cooked gooseberries through a sieve, collecting the liquid in a bowl or large jug. Discard the pulp.
  • Add the sugar to the liquid and stir until it has completely dissolved.
  • Pour the cordial into sterilized bottles or jars and seal tightly.
  • Allow cordial to mature in the fridge for 1 week. Keep it in the fridge and use it up within 3-4 weeks. Or freeze it to enjoy as and when you like.

TIPS for making homemade gooseberry cordial

 

Fresh Gooseberries:

For the best results, it’s best to use fresh gooseberries for cordial making.
If using frozen or canned gooseberries, be sure to rinse and drain them beforehand. Sweetness levels may need to be adjusted before storing to get the desired flavour profile. Adjust your expectations accordingly.

Adjust Sweetness Level:

Taste test your cordial after it has cooled and adjust sweetness levels as desired by adding more sugar, honey or another sweetener if necessary.

Store in Refrigerator:

Thanks to its significant sugar content, your homemade gooseberry cordial could last a few weeks when stored in an airtight container in the refrigerator. You may want to freeze some in a freezer-safe container, zip-lock bag or ice-cube tray (and then into a zip-lock bag).
 

Create a unique version of a gooseberry cordial

 
1. Add different citrus zest like oranges or limes for a change in flavour notes.
2. For a different hit of sweetness, use honey or agave nectar to supplement the sugar content.
3. Infuse the cordial with herbs and spices such as rosemary, ginger, cinnamon or cardamom.
4. Create other interesting flavours by adding extracts like vanilla, almond or peppermint.

  • Add gooseberry cordial to sparkling wine for an elegant and refreshing summer cocktail. Or Add 1-2 tablespoons to a regular glass of still or sparkling water and ice for a delicious drink. Or for something stronger, add to your favourite gin or vodka.
  • Use as a drizzle to your favourite desserts such as cheesecake, meringue pies or ice cream sundaes.
