Peach Chia Seed Jam Recipe

Delicous and easy to make - whats not to love about this peach chia see jam?

Ingredients
  

  • 2 cups peaches, fresh or frozen
  • 1 tbsp lemon juice
  • ½ tbsp water
  • 2 tbsps chia seeds
  • 1-2 tbsp honey OR another sweetener of your choice

Instructions
 

  • Wash, peel and cut up fresh peaches. Allow frozen peaches to thaw a bit to facilitate cup measurement, but hold onto their juices!
  • Add the peaches to your saucepan with the water and lemon juice. Stir together over medium-high heat until the mixture starts to bubble lightly and the peaches start softening and breaking down.
  • You can either use a fork, spoon or potato masher to break up the fruit further to your preferred consistency.
  • Now you can add in the chia seeds and stir.
  • After 1-2 minutes, taste the jam to see how much of your chosen sweetener you want to add - do this in small amounts and taste again to get to your ideal sweetness level.
  • Once you are satisfied with the taste and thickness of your jam mixture, remove the saucepan from the heat, and let it stand for around 5 min.
  • After stirring the jam one more time, ladle it into jars and seal.
  • You can then either refrigerate the jam for 1 week, freeze it for up to 3 months, or...enjoy some immediately!
  • This recipe makes just enough jam for you to enjoy, and maybe share before you just have to get some more fruit to try it with. Exciting stuff!

TIPS for Making Peach Chia Seed Jam

    • It is important to start with ripe peaches, whether they are fresh or frozen. Not only will they be more flavorful, but they will also be easier to break down during the cooking process.
    • While chia seed jam can be made without cooking, cooking the jam encourages the release of more fruit juices, softens the fruits to a more jam-like consistency (instead of being closer to a sauce-like texture), and often enhances the vibrancy and flavour of fruits.
    • Be sure to cook the jam until it reaches the desired consistency. Chia seeds absorb liquid quickly, so if you like a thinner jam, you won't need to cook it for as long.
    • Add a bit of sweetness to your Peach Chia Seed Jam can be quite tart on its own. A little sweetener of your choice will go a long way towards rounding out the flavour. Ripe, naturally sweet fruits may only require a small amount of sweetener if any.
    • A guiding ratio of fruit to chia seeds is 2 cups of fruit to 2 tablespoons of chia seeds. To make a thicker texture, where fruit may be particularly juicy, stir in one teaspoon of chai seeds at a time until you achieve the desired consistency.

    • If you dislike the prominence of the chia seeds in your peach jam, use an immersion blender to puree the mix, which will make for a smoother jam and less obvious seeds.
    • You may choose to omit or reduce the lemon juice if your fruits are tart already. The lemon juice does however contribute natural pectin to support the thickening process, as well as adding flavour.
