Pickled Courgette Recipe

A versatile pickle to use up a glut of courgettes, and to expand the ways to enjoy them.

Ingredients
  

  • 450 g courgettes (1lb)
  • 2 medium onions
  • 500 ml apple cider vinegar
  • 150 g white sugar
  • 1 tsp celery seeds
  • 1 tsp fennel seeds
  • 2 tsp mustard seeds
  • ΒΌ tsp ground ginger
  • 1 tsp ground turmeric
  • 1 tbsp dried chilli flakes

Instructions
 

  • Wash the courgettes and trim off the ends. Cut them into 1 to 1.5 cm thick slices or narrow spears.
  • Place in the colander resting on top of the bowl and sprinkle the cut courgettes with salt and mix well. Cover with some greaseproof paper and rest a small plate on top. Leave to stand for 2 hours.
  • Rinse the courgettes in chilled water and drain well.
  • Peel and slice the onions.
  • Prepare the pickling liquid in the saucepan by adding the vinegar, sugar, and spices. Bring to a boil, then reduce the heat and simmer for 10 minutes. Take it off the heat and let it stand for a few minutes while you arrange the vegetables.
  • Arrange the courgette and onion slices in your clean glass jar(1L) or jars and then ladle in the pickling liquid, ideally covering all the vegetables.
  • Seal with lids and lightly shake the jar(s) to disperse the ingredients throughout.
  • Stand the pickles in the fridge and allow them to mature for 3-4 weeks before using.
  • If kept chilled in the fridge, they may last for up to 2-3 months.
  • Use any leftover pickling liquid to make a tasty vinaigrette for your next salad.
