Recipe for Making Passionfruit Cordial

A delicious way to enjoy the sweet and tart flavour of passionfruit in any way that you like.

Equipment

Ingredients
  

  • 200 g passionfruit pulp (about 8-10 / 500g ripe passionfruit)
  • 250 ml honey
  • 500 ml water
  • 50 ml lemon juice

Instructions
 

  • Rinse the passionfruit with cold water, drain and cut them in half. Scoop out the fleshy pulp inside, and weigh.
  • In a large cooking pot, bring the water to a boil over medium heat and add the honey, stirring until dissolved. Turn down the heat and add the passionfruit pulp, and the lemon juice, stirring continuously until everything is well combined.
  • Bring it up to a boil, then simmer for 5 minutes, stirring occasionally to make sure nothing sticks to the bottom of the pan. Once it looks slightly syrupy, turn off the heat and let it cool for about 10 minutes.
  • **If you choose to, you can then strain the mixture through a fine mesh sieve or muslin lining a colander into a clean bowl or container. Discard any solids remaining in the sieve/cheesecloth.
  • Pour cordial into clean, sterilized prepared bottles or jars with lids/caps and store in the refrigerator for up to 2-3 weeks (or freeze cordial for up to 3 months).

Start with Fresh Passionfruit:

For the best results, it’s best to use fresh passionfruit for making a homemade cordial.

Sweeten to Your Taste:

Adding sugar to the passionfruit mixture is essential for balancing out flavours. But the amount of sweetness will depend on individual tastes, so experiment until you are happy with the flavour.

Simmer Gently:

Once all of the ingredients are added to a pot, gently simmer them for about 30 minutes until the sugar is dissolved and the pulp is softened.

Strain & Bottle:

Decide on whether you want any, some or all of the seeds in the final cordial.
For seedless, use a fine-mesh strainer to strain out any solids before transferring your cordial into bottles or jars with tight-fitting lids. Be sure to sterilize these containers first!
 

Flavour options for a passionfruit cordial

 

1. Choose a different sweetener:

Instead of using sugar or artificial sweeteners, try substituting honey, agave nectar, or maple syrup for an alternative flavour profile.

2. Add other ingredients:

For additional flavour complexity, you can add extracts such as vanilla, almond and/or orange blossom to the cordial recipe.

3. Change up the ratio of water to pulp/juice:

Experiment with adjusting the proportions of water to passionfruit pulp/juice to have a more concentrated taste with fewer servings needed per glassful!

4. Infuse it with herbs:

Fresh herbs like rosemary and mint can be added to the simmering mixture while still retaining their aroma and flavour under heat exposure (about 15 minutes).

5. Spice it up!:

Adding ground spices like cinnamon or nutmeg will give your cordial an extra kick without changing its overall taste too drastically!

6. Play around with fruits.:

You can use any type of fruit that has a similar profile as passionfruit; some great options include guava, mangoes and papayas!
