Recipe for Upcycling Red Onion Chutney

Make the most of an otherwise uninspiring shop-bought chutney and flex your creative muscles in the kitchen!

Equipment

  • Heavy-bottomed saucepan

  • Clean, sterilised glass jars with sealable lids

Ingredients
  

  • 1x 230-300g g jar plain shop-bought/homemade red onion chutney
  • 2 tbsp Worcestershire sauce
  • 2 tbsp apple cider vinegar (or any other vinegar of your choice)
  • 1-2 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • ½ tsp chilli flakes
  • 2 tsp dried onion powder
  • salt and pepper to taste

Instructions
 

  • Add oil to a saucepan over medium heat.
  • Wash and prepare the garlic and ginger. Mince or chop finely.
  • Add the minced garlic, and grated ginger, to the saucepan and cook this until fragrant, but not brown.
  • Pour in the contents of the shop-bought red onion chutney jar.
  • Over low heat, add the Worcestershire sauce and apple cider vinegar to the chutney, onion powder and chilli flakes, stirring well to combine.
  • Stir to incorporate all the ingredients evenly.
  • Allow the chutney to simmer gently for about 10-15 minutes, stirring occasionally to prevent scorching. This will help the flavours meld together and create a more complex taste profile.
  • Taste the chutney and adjust the seasoning with salt and pepper as needed. If you prefer a spicier chutney, you can add more chilli flakes at this stage.
  • Once the chutney has reached your desired flavour and consistency, remove it from the heat and ladle it into the prepared warm sterilised jars.
  • Let the jar(s) cool to room temperature.
  • Once opened and upcycled, the chutney should be stored in the refrigerator and typically lasts for up to 4 weeks.
    Always use a clean spoon when serving the chutney to prevent contamination and ensure its freshness.
