Chilli mango sauce recipe
Equipment
- Kitchen scales
- Chopping board and knife
- Large saucepan
- Long-handled spoon for stirring
- Blender OR Food processor
- Ladle
- Jam Funnel
- Clean, sterilised glass jars/bottles with sealable vinegar-proof lids
Ingredients
- 2 whole mangoes OR 2 cups of frozen mango
- 1.5 cm ginger
- 2 cloves garlic
- 1 onion
- 2 chillies
- 15 ml vegetable oil
- 120 ml apple cider vinegar
- 50 ml water
- 100 g sugar
- ⅓ tsp salt
Instructions
- Wash, peel and dice the mango into small cubes.
- Peel the garlic and ginger and roughly chop.Peel and chop up the shallot.
- Carefully wash the chillies. Remove the stalks; cut them in half and remove the seeds (unless you want to have a super hot sauce). Chop up the chillies.
- Add these fresh ingredients to your blender or food processor, in batches, and blend till fine. Empty the puree into your preserving pan.
- Once all the fresh ingredients have been put into the pan, add the rest of the ingredients and stir through to mix.
- Gently turn up the heat, and keep stirring until the sugar has dissolved. (Open a window or door as the vinegar and chilli will make themselves known!)
- Once the sugar is dissolved, turn up the heat until the mixture is boiling.Turn the heat down and allow this delicious sauce to simmer for 10-15 minutes. Stir from time to time.
- Remove from heat and ladle the sauce into a sealable sterilized jar/bottle for storage.
