Creating a pleasing gooseberry cordial

First, the tart fruits must be washed and topped-and-tailed by hand. Then, they are boiled in water to break them down. Once this mixture has cooled down, a fine strainer can be used to separate any solids.

The resulting liquid is returned to the pan and the sugar and lemon are added. Stir to dissolve the sugar and simmer until it starts to become syrup-like.

Then the cordial can be poured into bottles or jars and stored in the fridge for a week to mature before enjoying. You can also freeze some for later use.

With its sharp yet sweet aroma and fruity taste, gooseberry cordial is sure to delight any palate!
